Fishbone is a product of my heart.
A little showcase of my home country, Portugal. I am proud to act as an ambassador in this culinary adventure that you will be a part of.
From a young age I was exposed to the great flavours of my family`s cooking, I was a part of making wine by grape harvesting with my grandfather, watching my grandmother bake bread on Sunday mornings, feeding the animals and of course, being raised by the ocean !
All that gave me a whole other level of appreciation for food and wine... Now, after being in Canada for 15 years and having 14 years in the industry learning from some of the best in the business, such as Chiado, Centro and Zucca, it’s now my turn to pass the experience on to my kids, and you...
A menu inspired by my culture, but with Chef Chris Waye’s identity. His views on the simplicity of preparation and freshness of the product make him the great Chef that he is. Chef Christoper Waye has joined us after 5 solid years under the umbrella of Chef Martin Kouprie at Pangea, which allowed him to be a part of a team that should be an example to all of us when it comes to utilizing sustainable products.
So let me be your guide in this adventure of Portuguese flavours...

Our menu features:
- Cantaloupe and Prosecco Soup
- French Toast, Roasted Pear Relish with Cinnamon Sugar
- Smoked Salmon, Potato Rosti, Sour cream and Chives
- Steak Frites with Fried egg
- Shrimp Ravioli, honey mushrooms, leeks with lemon oil
- Eggs Benedict, housemade bacon, Holldandaise

Peanut Butter Banana Spring Rolls
1 medium banana cut in half
3 tbsp sugar
2 tbsp butter
1 1/4 tbsp peanut butter
2 spring roll paper
1 egg whiteIn a medium pan add sugar and melt until carmelized (looking for golden brown) add buter & peanut butter and stir in. Add bananas, toss to evenly coat. Pour on to a parchment paper lined tray to cool. Lay out spring roll paper on a angle . Place banana caramel mix in bottom and roll. When you get to the half way point tuck in.
